Every morning on the Karel Doormanstraat we start with empty counters. No freezer to fall back on, nothing half made waiting in a box.
The pistachio travels from Sicily, the matcha from Uji, and the fruit arrives when it is ready, not a week earlier. Some days that means one cake fewer. We think that is the better trade.
